Instructions

Step 1: Prepare the Cheesecake Filling

  1. In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Scoop teaspoon-sized dollops onto a parchment-lined plate. Freeze for 30 minutes.

Step 2: Make the Cookie Dough

  1. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  2. In a separate large bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla extract, mixing until well combined.
  4. Gradually mix in the dry ingredients to form a soft dough.

Step 3: Assemble the Cookies

  1. Scoop 1 tablespoon of cookie dough and flatten it slightly.
  2. Place a frozen cheesecake filling dollop in the center and cover with another piece of dough.
  3. Roll into a smooth ball, ensuring the cheesecake is completely sealed.

Step 4: Coat in Cinnamon-Sugar

  1. In a small bowl, mix granulated sugar and cinnamon.
