  • 1 cup shredded carrots
  • ½ cup finely chopped green onions
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 package (about 20) egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Filling

    • Add the shredded cabbage, carrots, and green onions. Stir and cook until softened.
    • Mix in the garlic, soy sauce, sesame oil, ground ginger, salt, and pepper. Cook for another 2-3 minutes. Remove from heat and let the filling cool.
  2. Assemble the Egg Rolls

    • Lay an egg roll wrapper on a clean surface in a diamond shape.
    • Spoon about 2 tablespoons of the filling onto the center.
    • Fold the bottom corner over the filling, tuck in the sides, and roll tightly.
    • Brush the top corner with beaten egg to seal. Repeat with the remaining wrappers.
  3. Fry the Egg Rolls

    • Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
    • Carefully place a few egg rolls in the hot oil, frying in batches.
    • Fry for about 3-4 minutes, turning occasionally, until golden brown and crispy.
    • Remove with a slotted spoon and drain on paper towels.
  4. Serve

    • Enjoy warm with sweet chili sauce, soy sauce, or your favorite dipping sauce.

Notes

  • For extra crunch, you can double-fry the egg rolls by frying them once at 325°F, then again at 375°F.
  • To make ahead, freeze assembled (uncooked) egg rolls in a single layer, then store in an airtight container. Fry directly from frozen, adding 1-2 extra minutes to the cooking time.
