- ¼ teaspoon black pepper
- 1 package (about 20) egg roll wrappers
- 1 egg, beaten (for sealing)

Prepare the Filling
- Add the shredded cabbage, carrots, and green onions. Stir and cook until softened.
- Mix in the garlic, soy sauce, sesame oil, ground ginger, salt, and pepper. Cook for another 2-3 minutes. Remove from heat and let the filling cool.

Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface in a diamond shape.
- Spoon about 2 tablespoons of the filling onto the center.
- Fold the bottom corner over the filling, tuck in the sides, and roll tightly.
- Brush the top corner with beaten egg to seal. Repeat with the remaining wrappers.

Fry the Egg Rolls
- Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
- Carefully place a few egg rolls in the hot oil, frying in batches.
- Fry for about 3-4 minutes, turning occasionally, until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.

Notes
- For extra crunch, you can double-fry the egg rolls by frying them once at 325°F, then again at 375°F.
