- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup refried beans
- ½ cup salsa
- 4 large flour tortillas
- 1 tablespoon olive oil (for brushing or frying)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) or heat oil in a frying pan if you’re frying the chimichangas.
- Place the tortillas flat on a clean surface. In the center of each tortilla, layer the ground beef (or chicken), cheese, refried beans, and salsa. Add a pinch of salt and pepper.
- Fold in the sides of the tortilla and roll it up tightly, sealing the edges.
- If baking: Lightly brush the chimichangas with olive oil and place them on a baking sheet. Bake for 20-25 minutes or until golden and crispy.
- If frying: Heat a little olive oil in a frying pan over medium-high heat. Fry each chimichanga until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
- Serve hot with extra salsa, guacamole, or sour cream.
Notes
- To make ahead, freeze the rolled chimichangas on a baking sheet until solid, then store in a freezer bag. Bake directly from frozen, adding an extra 5-10 minutes of cook time.
- For a vegetarian version, use black beans and your favorite veggies instead of meat.
