Description

Frozen Chimichangas are a crispy, delicious, and easy-to-make meal. These deep-fried tortillas are packed with savory fillings like seasoned beef, chicken, or vegetables, offering a comforting and satisfying bite. Ideal for a quick weeknight dinner or a fun snack, they can be made in advance, frozen, and cooked to crispy perfection whenever you’re craving a tasty treat.


Ingredients

  •  cups cooked and seasoned ground beef or chicken (or a vegetarian filling)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup refried beans
  • ½ cup salsa
  • 4 large flour tortillas
  • 1 tablespoon olive oil (for brushing or frying)

 

  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) or heat oil in a frying pan if you’re frying the chimichangas.
  • Place the tortillas flat on a clean surface. In the center of each tortilla, layer the ground beef (or chicken), cheese, refried beans, and salsa. Add a pinch of salt and pepper.
  • Fold in the sides of the tortilla and roll it up tightly, sealing the edges.
  • If baking: Lightly brush the chimichangas with olive oil and place them on a baking sheet. Bake for 20-25 minutes or until golden and crispy.
  • If frying: Heat a little olive oil in a frying pan over medium-high heat. Fry each chimichanga until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

 

  • Serve hot with extra salsa, guacamole, or sour cream.

Notes

  • To make ahead, freeze the rolled chimichangas on a baking sheet until solid, then store in a freezer bag. Bake directly from frozen, adding an extra 5-10 minutes of cook time.
  • For a vegetarian version, use black beans and your favorite veggies instead of meat.
